Pakistani Chickpea Dip

It's a dish that reflects the essence of Pakistani home cooking, where ingredients are measured by intuition and experience rather than strict recipes. This version captures the soul of these kitchens, offering a taste of everyday life in Pakistan.

Expect a creamy and rich dip, where the nuttiness of tahini mingles harmoniously with the earthiness of chickpeas and a bright splash of lemon. Garlic and cumin add warmth, while salt is adjusted to enhance every other flavor. It's a dip designed for communal enjoyment, perfect for scooping up with warm, fresh flatbreads or crispy crackers, inviting everyone to indulge together.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by draining and rinsing 400 g of chickpeas thoroughly under cold water to remove any excess brine. Transfer the chickpeas to a food processor or a large mortar and pestle. Blend or pound the chickpeas until they form a coarse paste, ensuring there are no whole chickpeas left. This base should be smooth yet slightly grainy, providing a creamy texture with a bit of bite.
  2. Add 2 tbsp of tahini to the chickpea paste. Slowly drizzle in the juice of one lemon while continuing to blend or pound the mixture. The acid from the lemon will help emulsify the tahini, creating a smooth and creamy consistency. The mixture should start to look pale and creamy as the tahini and lemon juice are fully incorporated.
  3. Peel and crush 2 cloves of garlic, then add them to the chickpea mixture along with 1 tsp of cumin. Blend or mix thoroughly to ensure the spices are evenly distributed. The garlic should infuse the dip with a sharp aroma, while the cumin adds a warm, earthy undertone.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste the dip on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will develop further as the dip rests.
  5. Transfer the chickpea dip to a serving bowl and let it rest for at least 10 minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by fresh bread or vegetables for dipping.
