Ingredients

Method

  1. Start by preparing the base for your dip. Take 400 g of yogurt and place it in a medium-sized mixing bowl. Finely chop a generous handful of fresh herbs, such as cilantro and mint, and add them to the yogurt. Peel and mince 2 cloves of garlic, then add them to the mixture. Use a mortar and pestle or a blender to combine these ingredients until the mixture is smooth and the herbs are well integrated, giving the yogurt a light green tint.
  2. Slowly incorporate olive oil into the mixture. Drizzle about 2 tablespoons of olive oil into the yogurt blend while stirring continuously with a spoon. This will help to emulsify the dip, giving it a creamy texture. If you notice the dip becoming too thin, pause the addition of oil and stir until it thickens slightly.
  3. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and then taste the dip on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will develop further as the dip rests. The garlic should add a subtle pungency, enhancing the overall flavor without overpowering the herbs.
  4. Allow the dip to rest briefly at room temperature. This resting period, about 10 minutes, allows the flavors to meld together and the garlic to mellow. Serve the dip cool, drizzling a little more olive oil on top just before serving to add a glossy finish. This dish is perfect for sharing, embodying the communal spirit of Pakistani dining.
