Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by placing 400 g of chickpeas into a food processor or a mortar and pestle. Blend or pound them until they form a coarse paste. The texture should be slightly chunky, not completely smooth, allowing for a bit of bite in the dip.
  2. Add 2 tablespoons of tahini to the chickpea paste. Squeeze in the juice of one lemon, ensuring no seeds fall into the mixture. Blend or mix these ingredients together slowly, allowing the tahini and lemon juice to fully incorporate into the chickpeas, creating a creamy consistency.
  3. Peel and finely chop 2 cloves of garlic. Add the garlic and 1 teaspoon of cumin to the mixture. Blend again until the garlic is evenly distributed, and the cumin adds a warm, aromatic note to the dip.
  4. Gradually add fine sea salt to taste, mixing it in thoroughly. Taste the dip on a piece of bread to check the seasoning, ensuring the flavors are balanced and to your liking.
  5. Let the dip rest for about 5 to 10 minutes at room temperature. This brief resting period allows the flavors to meld together. Serve the dip cool, ready for sharing at the table.
