Thai Chickpea Dip 3 finds its roots in the everyday kitchens of Thai homes, where cooking is as much about instinct as it is about ingredients. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any excess salt and starch. Transfer the chickpeas to a mortar and pestle or a food processor. Begin pounding or blending them until they reach a coarse, paste-like consistency, ensuring there are no whole chickpeas remaining.
  2. Add 2 tbsp of tahini to the chickpea mixture. Continue to pound or blend until the tahini is fully incorporated, resulting in a smoother texture. This step helps to bind the chickpeas and adds a creamy element to the dip.
  3. Slowly incorporate the juice of one lemon into the mixture. Add it gradually while stirring or blending, allowing the acid to balance the richness of the tahini. The mixture should become slightly more fluid and take on a brighter aroma.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the chickpea mixture, along with 1 tsp of cumin. Blend or stir until the spices are evenly distributed, enhancing the dip's flavor profile with a warm, earthy undertone.
  5. Season the dip with fine sea salt to taste. Start with a small amount, tasting as you go, and adjust until the flavors are well-balanced. Use a piece of bread to taste the dip, ensuring the salt enhances the flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, resulting in a more harmonious taste. Serve the dip cool, setting it out on the table for sharing, as is traditional in Thai home cooking.
