Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic

Method

  1. Begin by preparing the base for your Thai Herb Dip 2. In a mortar and pestle, or using a blender, combine 400 g of yogurt with a generous handful of fresh herbs. Use herbs like cilantro, mint, or Thai basil, depending on your preference. Pound or blend until the mixture is smooth and the herbs are finely incorporated, creating a vibrant green color throughout the yogurt.
  2. Slowly drizzle in olive oil while continuing to blend or stir. Aim for about 2 tablespoons of olive oil, adding it gradually to allow the yogurt to absorb the richness without becoming too thin. This step helps to create a creamy texture and enhances the flavor profile of the dip.
  3. Peel and finely mince 2 cloves of garlic, then add them to the yogurt mixture. Stir well to evenly distribute the garlic, which will add a pungent depth to the dip. Taste the mixture on a piece of bread to gauge the seasoning.
  4. Add fine sea salt to taste, starting with a small pinch and increasing as needed. The salt should enhance the flavors without overpowering the delicate balance of herbs and yogurt. Taste again on bread to ensure the seasoning is just right.
  5. Allow the dip to rest briefly at room temperature for about 10 minutes. This resting period lets the flavors meld together, giving the herbs and garlic time to infuse the yogurt fully. Serve the dip cool, drizzled with a little extra olive oil on top for a finishing touch.
