Tzatziki

Serves 4 Dip vegetarian, Appetizers

Tzatziki

Tzatziki finds its place among the lively spreads of Greek mezze, where it shares the table with an array of small, flavorful dishes. This refreshing dip makes a frequent appearance, embodying the essence of Mediterranean simplicity with its roots deeply embedded in everyday Greek life. Crafted for the home cook, this version brings the spirit of the sea and the garden to your kitchen, inviting you to experience the vibrant flavors that define the region.

The creamy texture of Greek yogurt mingles with the crunch of fresh cucumber, while the pungency of garlic and the brightness of lemon juice create a harmonious balance. A hint of dill weaves through each bite, complemented by the smooth richness of extra virgin olive oil. Seasoned with fine sea salt, this tzatziki delivers a taste that is both refreshing and indulgent, perfect for scooping up with warm pita or adding a cool contrast to grilled meats.

Ingredients

  • 500 gGreek yogurt
  • 1cucumber
  • 2 clovesgarlic
  • 2 tbspextra virgin olive oil
  • 1 tbspdill
  • 1 tbsplemon juice
  • to tastefine sea salt

Method

  1. Begin by preparing the cucumber. Peel the cucumber and grate it using the large holes of a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial to prevent the tzatziki from becoming too watery.
  2. In a medium-sized mixing bowl, combine 500 g of Greek yogurt with the grated cucumber. Stir them together until the cucumber is evenly distributed throughout the yogurt, creating the base for your tzatziki.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt and cucumber mixture. Stir gently to incorporate the garlic, ensuring it is evenly mixed, which will infuse the tzatziki with its distinctive flavor.
  4. Slowly drizzle 2 tablespoons of extra virgin olive oil into the mixture while stirring continuously. This will help to emulsify the oil into the yogurt, creating a smooth and creamy texture.
  5. Add 1 tablespoon of lemon juice to the bowl and mix well. The lemon juice will add a fresh, tangy flavor that balances the richness of the yogurt and olive oil.
  6. Finely chop 1 tablespoon of dill and add it to the mixture. Stir until the dill is evenly distributed, providing a fresh and aromatic note to the tzatziki.
  7. Season the tzatziki with fine sea salt to taste. Start with a small pinch, then taste the mixture using a piece of bread or a vegetable stick. Adjust the seasoning as needed to ensure the flavors are well balanced.
  8. Allow the tzatziki to rest in the refrigerator for at least 15 minutes. This resting period helps the flavors meld together, enhancing the overall taste.
  9. Before serving, give the tzatziki a final stir and transfer it to a serving bowl. Drizzle a little extra virgin olive oil on top for added richness and a glossy finish. Serve cool, as part of a Mediterranean mezze spread.
