Ingredients

  • 4alheiras de Mirandela
  • 600 gturnip tops — blanched
  • 800 gpotatoes — boiled or roasted
  • 4eggs — fried
  • 5 clovesgarlic — sliced
  • 6 tbspolive oil
  • to tastefine sea salt

Method

  1. Begin by preparing the potatoes. Peel and cut 800 g of potatoes into even-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of fine sea salt. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender when pierced with a fork.
  2. While the potatoes are cooking, prepare the turnip tops. Rinse 600 g of turnip tops thoroughly under cold water to remove any grit. In a separate pot, bring water to a boil, add a pinch of salt, and blanch the turnip tops for about 3-4 minutes until they turn bright green and are tender. Drain them and set aside.
  3. In a large frying pan, heat 4 tablespoons of olive oil over medium heat. Add 5 cloves of garlic, thinly sliced, and sauté until they are golden and fragrant, being careful not to burn them. Add the blanched turnip tops to the pan, tossing them in the garlic-infused oil until they are well coated and heated through. Season with fine sea salt to taste and set aside.
  4. In the same frying pan, add the remaining 2 tablespoons of olive oil. Once the oil is hot, add 4 alheiras de Mirandela. Cook them over medium heat, turning occasionally, until the skins are golden brown and slightly crisp. The sausages should be heated through and slightly firm to the touch, indicating they are cooked.
  5. While the alheiras are cooking, bring a small pot of water to a gentle simmer. Carefully lower 4 eggs into the water and poach them for about 3-4 minutes until the whites are set but the yolks remain runny. Remove the eggs with a slotted spoon and drain on a paper towel.
  6. To serve, arrange the potatoes on a large platter. Place the cooked alheiras on top, followed by the sautéed turnip tops. Finally, gently place a poached egg on top of each alheira. Serve immediately, allowing the runny yolk to mingle with the flavors of the dish.
