Arroz Tapado

Serves 4 to 6 meat

Arroz Tapado

Arroz Tapado is a beloved staple in Peruvian households, often prepared for family meals where the warmth of home-cooked food is a centerpiece. This dish reflects the essence of everyday Peruvian cooking, where ingredients are measured with intuition and love rather than precision. It's a dish that invites everyone to gather around the table, sharing both food and conversation.

A well-made Arroz Tapado should be a comforting blend of savory and sweet, with the richness of minced beef and the unexpected sweetness of raisins mingling perfectly. The rice acts as both a foundation and a gentle cushion, holding the flavors together, while the eggs add a subtle richness. Each bite should feel like a cozy embrace, reminding you of the simple pleasures of home.

Ingredients

  • 400 grice
  • 300 gminced beef
  • 1 handfulraisins
  • 2eggs
  • to tastefine sea salt

Method

  1. Rinse 400 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky. In a medium saucepan, add the rinsed rice and enough water to cover it by about 2 cm. Bring to a boil over high heat, then reduce to low, cover, and simmer until the rice is tender and the water is absorbed, about 15 minutes. Fluff with a fork and set aside.
  2. In a large skillet, heat a generous amount of oil over medium-high heat. Add 300 g of minced beef, breaking it up with a wooden spoon. Season with fine sea salt to taste and any spices you prefer, such as cumin or paprika, to enhance the flavor. Cook until the beef is browned and each piece has a deep color, which indicates a rich flavor development.
  3. Add a handful of raisins to the browned beef in the skillet. Stir them in and allow them to cook for a couple of minutes until they plump up and slightly caramelize, adding a hint of sweetness to the dish.
  4. Lower the heat to medium and crack 2 eggs into the skillet with the beef and raisins. Stir continuously to scramble the eggs, mixing them thoroughly with the beef. Cook until the eggs are fully set and integrated into the mixture, creating a cohesive filling.
  5. Taste the beef mixture and adjust the seasoning with more fine sea salt if necessary. The filling should be savory with a hint of sweetness from the raisins.
  6. To assemble the Arroz Tapado, take a small bowl and lightly oil it. Press a layer of the cooked rice into the bottom, then add a layer of the beef mixture. Top with another layer of rice, pressing down gently to compact it.
  7. Invert the bowl onto a plate to release the layered rice and beef, creating the 'tapado' effect. Serve immediately, allowing the layers to be visible and enjoyed with each bite.
