Brasileiro Chicken Roast

Brasileiro Chicken Roast is a beloved dish found on Brazilian family tables, especially during Sunday lunches when the whole family gathers. The roast chicken emerges from the oven with a golden, crispy skin, seasoned with paprika and lemon for a subtle zest. Potatoes, roasted alongside, absorb the rich flavors and juices, creating a harmonious blend of textures. Salt and black pepper balance the dish, allowing each bite to resonate with the comforting flavors of a Brazilian home.

Ingredients

Method

  1. Start by patting the whole chicken dry with paper towels to remove excess moisture. This helps the skin crisp up when cooking. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, making sure to rub the spices all over the skin and inside the cavity for even flavor.
  2. In a large, heavy-bottomed roasting pan or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering but not smoking, carefully place the chicken in the pan, breast side down, to brown. Let it cook undisturbed until the skin is a deep golden brown, then turn the chicken to brown all sides evenly. This step adds depth of flavor and color to the final dish.
  3. While the chicken is browning, peel and cut 1 kg of potatoes into large chunks. Once the chicken is browned, remove it from the pan and set it aside on a plate. Add the potato chunks to the same pan, stirring them in the rendered fat and spices left behind, until they are lightly golden and starting to soften.
  4. Return the chicken to the pan, placing it on top of the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, then tuck the lemon halves into the pan for added aroma and flavor. Cover the pan with a lid or aluminum foil to trap the steam, which will help cook the chicken through.
  5. Reduce the heat to medium and let the chicken roast, basting occasionally with the juices from the pan. Check for doneness by inserting a knife into the thickest part of the thigh; the juices should run clear, and the meat should feel firm to the touch. The potatoes should be tender and infused with the flavors of the chicken and lemon.
  6. If the sauce in the pan is too thin, remove the chicken and potatoes to a serving platter and place the pan back on the stove over medium-high heat. Allow the sauce to reduce slightly, stirring occasionally, until it thickens to your liking. Taste and adjust the seasoning with more salt and pepper if necessary.
  7. Finish by sprinkling fresh herbs, such as chopped parsley or cilantro, over the chicken and potatoes for a burst of color and freshness. Serve the Brasileiro Chicken Roast family-style, directly from the pan or on a large platter, inviting everyone to share and enjoy.
