Ingredients

Method

  1. Begin by washing 2 eggplants and 2 tomatoes thoroughly. Cut the eggplants into 1-inch cubes, ensuring they are uniform for even cooking. Dice the tomatoes into small pieces, and finely chop 1 onion and 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and let them sit for about 10 minutes to draw out any bitterness.
  2. In a large, deep skillet or heavy-bottomed pot, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook the onion slowly, stirring occasionally, until it becomes translucent and soft, releasing its natural sweetness and aroma.
  3. Add the chopped garlic to the softened onion, stirring gently. Cook until the garlic is fragrant and just begins to turn golden, being careful not to let it burn, as this would impart a bitter taste to the stew.
  4. Increase the heat slightly and add the seasoned eggplant cubes to the pot. Stir well to coat the eggplant in the aromatic oil mixture. Allow the eggplant to cook until it begins to soften and takes on a slight golden color, indicating it's absorbing the flavors.
  5. Add the diced tomatoes to the pot, stirring to combine with the eggplant and onion mixture. The tomatoes will release their juices, creating a sauce. Continue to cook, stirring occasionally, until the eggplant is tender and the tomatoes have broken down into a thick, cohesive sauce. The stew should have a rich, slightly chunky texture.
  6. Taste the stew and adjust the seasoning with fine sea salt and black pepper to your preference. The flavors should be well-balanced, with the sweetness of the tomatoes complementing the savory eggplant.
