Ingredients

  • 600 gshrimp

Method

  1. Start by cleaning the shrimp: remove the shells and devein them by making a shallow cut along the back and pulling out the dark vein. Rinse the shrimp under cold water and pat them dry with a paper towel to ensure they cook evenly and absorb flavors well.
  2. Peel and finely chop 4 cloves of garlic. In a large skillet, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped garlic. Stir the garlic gently and cook until it becomes golden and fragrant, which will infuse the oil with its aroma.
  3. Add the shrimp to the skillet in a single layer, ensuring each piece is in contact with the hot oil. Cook the shrimp for about 2-3 minutes on one side until they turn pink and start to curl slightly. Flip the shrimp and cook the other side until they are just opaque and firm to the touch.
  4. Squeeze the juice of one lemon over the shrimp, allowing the acidity to brighten the flavors. Add chili to taste, adjusting the amount based on your preference for heat. Stir the shrimp gently to coat them evenly with the lemon juice and chili.
  5. Taste a piece of shrimp and sprinkle fine sea salt to taste, keeping in mind that the salt should enhance the natural sweetness of the shrimp without overpowering it. Serve immediately, ensuring the dish is hot and aromatic, perfect for sharing at the table.
