Cabbage and Carrot Atakilt

Cabbage and Carrot Atakilt is a staple of Ethiopian home cooking, often found on the table during casual family meals where sides double as mains. This dish, with its roots deeply embedded in the rhythm of everyday life, relies on the simplicity of its ingredients to bring a comforting aroma that invites everyone to gather and share.

Expect a vibrant medley of flavors with the earthiness of turmeric, the gentle heat of green chili, and the sweetness of carrots and cabbage. The texture is a delightful interplay of tender vegetables, perfect to scoop up with injera, the spongy flatbread that completes the meal.

Ingredients

  • 1/2 headgreen cabbage — coarsely chopped
  • 4carrots — sliced
  • 3potatoes — peeled and cut into chunks
  • 1 tspground turmeric
  • 1green chili — slit
  • 2red onions — very finely chopped
  • 4 clovesgarlic — minced
  • 1 tbspfresh ginger — minced
  • 3 tbspoil
  • 1 cupwater
  • 1 tspfine salt
  • as neededinjera — for serving

Method

  1. Begin by finely chopping 2 red onions and set them aside. Peel and mince 4 cloves of garlic and 1 tablespoon of fresh ginger. Slice 1 green chili into thin rings, removing seeds if you prefer less heat. Cut 1/2 head of green cabbage into bite-sized pieces, peel and slice 4 carrots into thin rounds, and peel and cube 3 potatoes into small, even pieces to ensure they cook evenly.
  2. In a large, dry pot over medium heat, add the chopped onions. Stir them occasionally, allowing their natural moisture to release and cook them slowly until they become soft and translucent, about 5 minutes. This slow cooking without oil helps to deepen their flavor.
  3. Once the onions are soft, add 3 tablespoons of oil to the pot. Stir in the minced garlic and ginger, cooking for another minute until they release their aroma. Add 1 teaspoon of ground turmeric, stirring well to coat the onions, garlic, and ginger, allowing the spice to bloom and become fragrant.
  4. Add the sliced carrots, cubed potatoes, and cabbage pieces to the pot. Stir well to coat the vegetables with the aromatic onion and spice mixture. Cook for about 5 minutes, stirring occasionally, until the vegetables start to brown slightly, enhancing their flavor.
  5. Pour in 1 cup of water and add 1 teaspoon of fine salt. Stir well to combine, then bring the mixture to a gentle simmer. Cover the pot and reduce the heat to low, allowing the vegetables to cook slowly. Simmer until the potatoes are tender and the sauce has reduced, leaving the vegetables coated in a flavorful glaze, about 20 minutes.
  6. Once the vegetables are tender and the sauce has thickened, taste the dish and adjust the salt if needed. Serve the Cabbage and Carrot Atakilt hot, accompanied by injera, allowing everyone to enjoy the vibrant flavors and comforting textures.
