Chettinad Chicken

Serves 4 to 6 chicken

Chettinad Chicken

Chettinad Chicken hails from Tamil Nadu, where it graces the table with its robust flavors and aromatic spices. This dish is a staple in Chettinad households, where its preparation is an unspoken language passed down through generations. Here, the cook's intuition is key—salt is judged by hand, and the generous use of fat reflects a culinary tradition that celebrates its ingredients. This recipe captures the essence of a home-cooked meal, lovingly shared with family and friends.

Expect a symphony of flavors, with the warmth of chettinad masala weaving through tender chicken pieces, harmonized by the creamy richness of coconut. The sesame oil imparts a nutty depth, while the curry leaves and tomatoes add a fragrant, tangy note. As you savor each bite, you'll appreciate the balance of spice and comfort, a hallmark of Tamil Nadu's cherished cuisine.

Ingredients

  • 800 gchicken pieces
  • 2 tbspchettinad masala
  • 1coconut — grated
  • 10curry leaves
  • 2onions
  • 2tomatoes
  • 3 tbspsesame oil
  • to tastefine sea salt

Method

  1. Begin by heating 3 tablespoons of sesame oil in a large, heavy-bottomed pan over medium-high heat. While the oil is heating, pat the 800 g chicken pieces dry with paper towels and season them with a generous pinch of fine sea salt and 2 tablespoons of chettinad masala. Once the oil is shimmering, add the chicken pieces to the pan in a single layer. Brown the chicken on all sides until it develops a deep golden color, which should take about 5 to 7 minutes per side. Remove the chicken from the pan and set aside.
  2. In the same pan, add 10 curry leaves, allowing them to sizzle and release their aroma into the oil. Quickly follow with 2 finely chopped onions. Cook the onions, stirring occasionally, until they become translucent and start to caramelize, which should take about 8 to 10 minutes. This step is crucial as it builds the base flavor of the dish.
  3. Add 2 chopped tomatoes to the pan, stirring them into the onion mixture. Cook until the tomatoes break down and integrate into a thick, rich sauce, about 5 to 7 minutes. The tomatoes should lose their raw smell and blend smoothly with the onions.
  4. Return the browned chicken pieces to the pan, along with any juices that may have collected. Stir to coat the chicken with the aromatic tomato-onion mixture. Crack open a coconut, extract the milk, and add it to the pan. Stir well to combine, ensuring the chicken is submerged in the sauce.
  5. Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Cover the pan and cook the chicken until it is tender and cooked through, about 20 to 25 minutes. The chicken should be easy to pierce with a fork, and the sauce should have thickened slightly.
  6. If the sauce appears too thin, remove the lid and let it simmer for a few more minutes to reduce. Taste the sauce and adjust the seasoning with more fine sea salt if necessary. The flavors should be robust and balanced, with a hint of spice from the masala.
  7. Finish the dish by garnishing with freshly torn curry leaves for a burst of fresh aroma. Serve the Chettinad Chicken hot, accompanied by steamed rice or flatbreads, allowing everyone at the table to share in this flavorful Tamil Nadu specialty.
