Chicken Pulao

Chicken Pulao is a staple of Pakistani home cooking, a dish that graces tables with its comforting presence. This is the version that families pass down through generations, where the balance of salt is a matter of instinct and the richness of ghee is embraced wholeheartedly. It's not reserved for special occasions but rather a regular guest at weekday dinners, reflecting the warmth of home-cooked meals that are meant to be shared.

The Chicken Pulao should be a fragrant harmony of tender chicken and fluffy basmati rice, each grain imbued with the warm notes of cumin and the subtle earthiness of bay leaf. The ghee brings a luscious depth, making every bite luxurious yet familiar. It's a dish that invites everyone to dig in, often served straight from the pot to the table, embodying the simplicity and richness of everyday Pakistani cuisine.

Ingredients

  • 700 gchicken
  • 400 gbasmati rice
  • 1onion
  • 1 tspcumin
  • 2 tbspghee
  • 1bay leaf
  • to tastefine sea salt

Method

  1. Start by patting the 700 g of chicken dry with paper towels. Season the chicken generously with fine sea salt and 1 tsp cumin, ensuring all pieces are evenly coated. Heat 2 tbsp ghee in a large, heavy-bottomed pot over medium-high heat. Once the ghee is hot, add the chicken pieces in a single layer, skin side down if applicable, and brown them on all sides until they develop a deep golden color. This should take about 5-7 minutes, and you should notice a rich aroma as the spices toast.
  2. While the chicken is browning, thinly slice 1 onion. Once the chicken is browned, remove it from the pot and set it aside on a plate. In the same pot, add the sliced onion and a bay leaf to the remaining ghee. Cook the onion over medium heat, stirring occasionally, until it becomes soft and translucent, with a light golden hue. This should take about 5 minutes, and the onions will start to release their sweetness.
  3. Return the browned chicken to the pot with the onions. Stir everything together to combine the flavors. Add 400 g of basmati rice to the pot, stirring gently to coat the rice grains in the ghee and spices. This step ensures that the rice absorbs the flavors and becomes slightly translucent, which should take about 2-3 minutes.
  4. Pour enough water into the pot to cover the rice and chicken by about 1 inch. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer. Cook until the rice is tender and has absorbed the water, and the chicken is cooked through, which you can tell when the meat is no longer pink at the bone and the juices run clear.
  5. Once the rice is cooked, check the consistency of the dish. If there's excess liquid, remove the lid and increase the heat slightly to reduce the sauce until it clings to the rice and chicken. Taste the pulao and adjust the salt if necessary, keeping in mind that the flavors should be balanced and savory.
  6. Turn off the heat and let the pulao sit covered for about 5 minutes to allow the flavors to meld and the rice to finish steaming. Fluff the rice gently with a fork to separate the grains. Serve the Chicken Pulao warm, garnished with fresh herbs if desired, and enjoy it as a centerpiece for a family meal.
