Chicken Souvlaki

Ingredients

  • 800 gchicken thigh — cubed
  • 60 mlextra virgin olive oil
  • 2lemons
  • 3 clovesgarlic
  • 1 tsporegano
  • pita and tzatziki — to serve

Method

  1. Begin by cutting the 800 g chicken thigh into bite-sized pieces, about 2.5 cm each. Place the chicken in a large bowl and season with fine sea salt and black pepper to taste. Squeeze the juice of 2 lemons over the chicken, ensuring each piece is coated. Add 1 tsp oregano and 3 cloves of minced garlic, mixing well to combine the flavors.
  2. Pour 60 ml extra virgin olive oil over the seasoned chicken, tossing to ensure an even coating. Allow the chicken to marinate for at least 30 minutes at room temperature, which helps to tenderize the meat and infuse it with the marinade flavors.
  3. Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated chicken pieces in a single layer, ensuring they are not overcrowded. Cook the chicken without moving it for about 3 to 4 minutes, allowing it to develop a golden-brown crust on one side.
  4. Flip the chicken pieces and continue to cook for another 3 to 4 minutes. The chicken is done when it is golden on all sides and the juices run clear when pierced with a knife. If using a thermometer, the internal temperature should reach 75°C.
  5. Remove the chicken from the heat and let it rest for a few minutes. This allows the juices to redistribute throughout the meat, ensuring each bite is juicy and flavorful. Taste a piece and adjust the seasoning with more salt or lemon juice if needed.
