Com Hen

Serves 4 to 6 seafood

Com Hen

Com Hen, a specialty from the central Vietnamese city of Hue, emerges from the home kitchens where tradition is passed down through generations. This dish, deeply rooted in the region's culinary practices, is often enjoyed as a comforting meal that brings families together. Its preparation mirrors the communal spirit of Hue, where every ingredient is a deliberate choice, made by hand.

The dish is a harmonious blend of tender baby clams and fragrant rice, elevated by the robust depth of fermented shrimp paste and the satisfying crunch of pork crackling. Fresh herbs lend a vibrant note, balancing the rich, savory flavors. Salt is a personal touch, each pinch added to taste, creating a dish that sings with authenticity and warmth.

Ingredients

  • 300 gbaby clams
  • 400 grice
  • 1 handfulherbs
  • 1 tbspfermented shrimp paste
  • 50 gpork crackling
  • to tastefine sea salt

Method

  1. Rinse the 300 g of baby clams under cold running water to remove any sand or grit. Drain them well in a colander and pat dry with a clean kitchen towel to ensure they don't add excess moisture to the dish.
  2. In a large pan, heat 2 tablespoons of vegetable oil over medium heat. Add 1 finely chopped shallot and 2 minced garlic cloves, stirring until they become fragrant and slightly golden, about 2 minutes. This forms the aromatic base that will infuse the clams with flavor.
  3. Add the baby clams to the pan, stirring gently to coat them with the aromatic oil. Cook the clams for about 2 to 3 minutes, just until they turn opaque and release their juices. This indicates they are cooked through without becoming rubbery.
  4. Stir in 1 tablespoon of fermented shrimp paste, mixing well to combine with the clams. The paste will add a deep, savory umami flavor that is characteristic of Com Hen.
  5. Add the cooked rice to the pan, breaking up any clumps with a spatula. Toss everything together until the rice is well-coated with the clam juices and shrimp paste, ensuring an even distribution of flavors.
  6. Crumble 50 g of pork crackling over the rice and clams, mixing gently to incorporate. The crackling adds a crunchy texture that contrasts with the tender clams and soft rice.
  7. Taste the dish and add fine sea salt to taste, keeping in mind that the shrimp paste is already salty. Adjust as needed to balance the flavors.
  8. Garnish with a handful of fresh herbs, such as mint and cilantro, for a burst of freshness. Serve immediately, allowing the warmth of the dish to highlight the vibrant flavors and textures.
