Inspired by the North African tradition of generous vegetable pots, this home version brings everyday ease and a touch of coastal flavor to your meal. It's a dish for any day of the week, blending the simple pleasures of olive oil, fresh produce, and fragrant spices.

Ras el hanout or cumin infuses the dish with a warm, aromatic complexity, while a squeeze of lemon brightens every bite. Ingredients

Method

  1. Begin by preparing your vegetables: peel and dice 2 carrots and 1 onion into small, even pieces. Slice 1 zucchini into half-moons. Rinse and drain 200 g of chickpeas thoroughly. Set these aside, as they will be added in stages to build layers of flavor.
  2. In a large, deep skillet or pot, heat 60 ml of extra virgin olive oil over medium heat. Add the diced onion and cook, stirring occasionally, until it becomes translucent and soft, releasing a sweet aroma. This should take about 5 minutes, indicating the onions are ready to form the base of your dish.
  3. Add the diced carrots to the skillet with the onions. Continue to cook, stirring occasionally, until the carrots begin to soften and the edges turn slightly golden. This step enhances the natural sweetness of the carrots, which is essential for balancing the flavors in the dish.
  4. Stir in the sliced zucchini and drained chickpeas. Sprinkle 1 tsp of ras el hanout or cumin over the vegetables, stirring well to coat them evenly. Cook until the zucchini is tender and the chickpeas are warmed through, with the spices releasing a fragrant aroma that fills the kitchen.
  5. Add 300 g of couscous to the skillet, stirring to combine it with the vegetables. Pour in enough hot water to just cover the couscous and vegetables, then cover the skillet with a tight-fitting lid. Remove from heat and let it sit for about 5 minutes, allowing the couscous to absorb the water and become fluffy.
  6. Remove the lid and fluff the couscous with a fork, ensuring there are no clumps and the grains are light and separate. Taste and add fine sea salt to your preference, adjusting as needed to enhance the dish's flavors.
  7. Serve the couscous with vegetables warm, garnished with a squeeze of fresh lemon juice and a sprinkle of chopped fresh herbs if desired. This final touch adds brightness and a fresh contrast to the warm, spiced vegetables.
