Ingredients

  • 80 mlextra virgin olive oil

Method

  1. Start by preparing the fish. Rinse the whole fish under cold water, then pat it dry with paper towels to remove excess moisture. This ensures a good sear and prevents steaming. Season the fish generously with fine sea salt, making sure to get into the cavity and all over the skin for even seasoning.
  2. Prepare the herb mixture by finely chopping a handful of parsley and oregano. Peel and mince 4 cloves of garlic. In a small bowl, combine the chopped herbs and garlic with 80 ml of extra virgin olive oil. This mixture will infuse the fish with aromatic flavors as it cooks.
  3. Slice 2 lemons into thin rounds. Set aside half of the slices for grilling and squeeze the juice from the remaining slices into the herb and oil mixture. Stir well to combine, creating a fragrant marinade that will enhance the fish's natural flavors.
  4. Preheat your grill to medium-high heat. Brush the grill grates with a bit of olive oil to prevent sticking. Place the fish on a large piece of aluminum foil or a fish grilling basket to make handling easier.
  5. Stuff the cavity of the fish with a few lemon slices and some of the herb mixture. This will infuse the fish from the inside as it grills. Brush the outside of the fish with the remaining herb and oil mixture, ensuring an even coating for flavor and moisture.
  6. Place the fish on the grill. Cook for about 6-8 minutes per side, depending on the size of the fish, until the skin is crisp and the flesh is just opaque and flakes easily with a fork. The aroma of grilled herbs and lemon will be your cue that the fish is ready.
  7. Remove the fish from the grill and transfer it to a serving platter. Squeeze fresh lemon juice over the top and garnish with the reserved lemon slices. Serve immediately to enjoy the full, fresh flavors of the Mediterranean.
