Hyderabadi Chicken Curry

Hyderabadi Chicken Curry is a cherished dish that reflects the vibrant culinary traditions of Hyderabad. Often prepared for family meals, this home-style version captures the essence of everyday cooking in an Indian household, where ingredients are measured by instinct and the table is always ready for sharing. The richness of this curry is achieved through the careful balance of spices and a generous use of fat, making it an essential part of Hyderabadi cuisine.

Expect a symphony of flavors where tender chicken pieces are enveloped in a creamy blend of yogurt and poppy seeds, with the subtle sweetness of coconut and the warmth of garam masala enhancing every bite. The onions provide a sweet foundation, while the ghee imparts a luxurious mouthfeel, all seasoned to perfection with fine sea salt. This dish, with its hearty and aromatic profile, is best enjoyed with family or friends, embodying the communal spirit of Indian dining.

Ingredients

  • 800 gchicken pieces
  • 200 gyogurt
  • 2 tbsppoppy seeds
  • 1 tbspcoconut
  • 2onions — fried
  • 1 tspgaram masala
  • 3 tbspghee
  • to tastefine sea salt

Method

  1. Begin by patting the 800 g chicken pieces dry with paper towels to ensure they brown properly. Season them generously with fine sea salt and 1 tsp garam masala, making sure each piece is evenly coated. In a large, heavy-bottomed pan, heat 3 tbsp ghee over medium-high heat. Once the ghee is hot and shimmering, add the chicken pieces in a single layer, skin side down if applicable, and brown them on all sides. This should take about 5-7 minutes, or until the chicken develops a deep golden color and releases easily from the pan.
  2. While the chicken is browning, prepare the aromatics. Thinly slice 2 onions and set them aside. Once the chicken is browned, remove it from the pan and set it aside on a plate. In the same pan, add the sliced onions to the remaining ghee and chicken drippings. Cook the onions over medium heat, stirring occasionally, until they become soft and translucent, about 8-10 minutes. The onions should be tender and slightly caramelized, adding a sweet depth to the curry.
  3. While the onions are cooking, prepare the yogurt mixture. In a small bowl, combine 200 g yogurt with 2 tbsp poppy seeds and 1 tbsp coconut. Mix well to form a smooth paste. Once the onions are ready, return the chicken to the pan and pour the yogurt mixture over the chicken and onions. Stir everything together to ensure the chicken is well-coated with the sauce.
  4. Reduce the heat to low and cover the pan with a lid. Allow the chicken to simmer gently in the sauce for about 20-25 minutes, or until the chicken is cooked through and tender. The sauce should thicken slightly and cling to the chicken pieces. If the sauce is too thin, remove the lid and let it reduce for a few more minutes, stirring occasionally. Taste the sauce and adjust the salt as needed, keeping in mind that the flavors will continue to develop as the curry rests.
  5. Once the chicken is cooked and the sauce has reached your desired consistency, remove the pan from the heat. If you like, you can finish the dish with a sprinkle of fresh herbs such as cilantro for added freshness and color. Serve the Hyderabadi Chicken Curry hot, ideally with steamed rice or warm naan, allowing everyone to share and enjoy this flavorful dish.
