Indian Eggplant Stew

Ingredients

Method

  1. Begin by washing and drying 2 eggplants and 2 tomatoes. Cut the eggplants into 1-inch cubes and the tomatoes into small chunks. Peel and finely chop 1 onion and 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and black pepper to taste, tossing them to ensure even coating. This step helps draw out moisture from the eggplant, which will enhance its texture when cooked.
  2. In a large, heavy-bottomed pot or deep skillet, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. The onion should not brown but should release its sweetness into the oil, forming the base of the stew.
  3. Add the chopped garlic to the softened onion and continue to cook for another 1-2 minutes until the garlic becomes fragrant. Be careful not to let the garlic brown, as it can turn bitter. The aroma should be inviting and slightly sweet.
  4. Increase the heat slightly and add the seasoned eggplant cubes to the pot. Stir to coat the eggplant in the onion-garlic mixture and oil. Cook for about 10 minutes, stirring occasionally, until the eggplant starts to soften and take on a golden hue. The eggplant should begin to collapse slightly, indicating it is absorbing the flavors.
  5. Add the chopped tomatoes to the pot, stirring them into the eggplant mixture. The tomatoes will release their juices, creating a sauce that will help the eggplant to cook further. Lower the heat to medium and cover the pot, allowing the stew to simmer gently. Stir occasionally, and cook until the eggplant is tender and the tomatoes have broken down into a thick sauce, about 15-20 minutes. The stew should be cohesive, with the eggplant fully cooked and soft.
  6. Taste the stew and adjust the seasoning with additional fine sea salt and black pepper if needed. The flavors should be balanced, with a slight sweetness from the onion and a rich, savory depth from the eggplant and tomatoes. Serve the Indian Eggplant Stew warm, ideally with rice or flatbread, allowing everyone to share and enjoy the comforting flavors.
