Ingredients

  • 2whole fish

  • lemon — sliced

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or debris. Pat them dry thoroughly with paper towels, ensuring the skin is free of moisture to achieve a crispy finish when grilled. Make three diagonal slashes on each side of the fish to help the seasoning penetrate and to ensure even cooking.
  2. In a small bowl, combine 2 tablespoons of olive oil with a generous pinch of fine sea salt and black pepper. Rub this mixture all over the fish, making sure to get into the slashes. This will help to season the fish evenly and create a flavorful crust.
  3. Preheat a large grill pan over medium-high heat. Once hot, add a little more olive oil to the pan to prevent sticking. Place the fish in the pan and scatter fresh herbs, such as thyme or rosemary, around them. The herbs will infuse the fish with a subtle aroma as they cook.
