  2. Drizzle 80 ml of olive oil over the sliced vegetables. Add your choice of herbs, such as thyme or oregano, and season with fine sea salt and black pepper to taste. Toss the vegetables gently with your hands or a spoon to ensure each slice is evenly coated with the oil and seasoning. This step infuses the vegetables with flavor before cooking.
  3. Select a large, heavy-bottomed skillet or sauté pan and place it over medium heat. Add a splash of olive oil to the pan, then add one finely chopped onion. Cook the onion slowly, stirring occasionally, until it becomes soft and translucent. This forms the aromatic base of the bake, enhancing the overall flavor.
