Ingredients

Method

  1. Pat the 4 white fish fillets dry with paper towels to remove excess moisture. This helps the seasoning adhere better and prevents steaming instead of searing. Season both sides of the fillets with fine sea salt to enhance their natural flavors.
  2. Slice the 2 zucchinis into thin rounds, about 1/4 inch thick, to ensure they cook evenly. Mince the 2 cloves of garlic finely, which will release their aromatic oils and enhance the dish's flavor.
  3. In a small bowl, combine 60 ml of extra virgin olive oil with the minced garlic and a generous handful of your chosen herbs, such as parsley, dill, or basil. This mixture will serve as the aromatic base for the fish, infusing it with Mediterranean flavors.
  4. Lay out four large pieces of aluminum foil, enough to wrap each fish fillet and its accompaniments securely. Drizzle a spoonful of the olive oil mixture onto the center of each foil piece, then arrange a layer of zucchini slices on top. This creates a flavorful bed for the fish and prevents it from sticking to the foil.
  5. Place a seasoned fish fillet on top of the zucchini slices in each packet. Drizzle the remaining olive oil mixture over the fish, ensuring it is evenly coated. This will keep the fish moist and infuse it with the garlic and herb flavors.
