This is the version you will find in homes, where family cooks trust their instincts to balance flavors. Generous with fat and seasoned by hand, this bake reflects the communal spirit of Pakistani dining, where dishes are meant to be shared and savored together.

The bake is a harmonious blend of tender eggplant, zucchini, and tomatoes, all bathed in olive oil and seasoned with fine sea salt and black pepper. Fresh herbs add a fragrant lift, making each bite a medley of comforting and vibrant flavors. Ingredients

  • 1eggplant
  • 2zucchini
  • 2tomatoes
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Begin by washing and drying 1 eggplant, 2 zucchini, and 2 tomatoes. Slice the eggplant and zucchini into rounds about 1/4 inch thick. Cut the tomatoes into slightly thicker slices to maintain their shape during cooking. Sprinkle the slices with fine sea salt and let them sit for about 10 minutes to draw out excess moisture, which will help them cook evenly and enhance their flavor.
  2. Heat 80 ml of olive oil in a large, deep skillet over medium heat. Add the eggplant slices in a single layer and cook until they are golden brown and tender, about 3-4 minutes on each side. Remove the eggplant and set aside. Repeat the process with the zucchini slices, adding more olive oil if necessary, until they are also golden and tender.
  3. In the same skillet, add a bit more olive oil if needed and reduce the heat to low. Add finely chopped onion (if using) and cook until it becomes soft and translucent, stirring occasionally. This will form the base of your bake, infusing the dish with a sweet, aromatic depth.
  4. Layer the cooked eggplant and zucchini over the softened onions in the skillet. Arrange the tomato slices on top, slightly overlapping them. Drizzle a little more olive oil over the top and sprinkle with your choice of herbs, such as fresh coriander or mint, and freshly ground black pepper.
  5. Cover the skillet with a lid and let the vegetables cook over low heat until the tomatoes are soft and the flavors have melded together, about 10-15 minutes. You want the vegetables to be tender but not mushy, and the tomatoes should release their juices to create a light sauce.
  6. Taste the dish and adjust the seasoning with more fine sea salt and black pepper if needed. The salt should enhance the natural sweetness of the vegetables without overpowering them.
