Ingredients

  • 2whole fish
  • 2 tbspolive oil
  • lemon — sliced
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or impurities. Pat them dry thoroughly with paper towels, both inside and out, to ensure a good sear and prevent steaming during cooking.
  2. In a large, heavy-bottomed skillet or grill pan, heat 2 tbsp of olive oil over medium-high heat. Once the oil is shimmering, add a handful of fresh herbs such as cilantro or parsley to the pan. Allow the herbs to sizzle for about 30 seconds until they release their aroma, infusing the oil with flavor.
  3. Season the fish generously with fine sea salt and black pepper on both sides and inside the cavity. Carefully place the fish in the pan, ensuring they lie flat and do not overlap. Cook for about 3 to 4 minutes on one side, until the skin is golden brown and crisp.
  4. Gently flip the fish using a spatula, taking care not to break the skin. Continue to cook on the other side for another 3 to 4 minutes. The fish is done when the flesh turns opaque and flakes easily with a fork.
  5. Squeeze fresh lemon juice over the cooked fish, letting it mingle with the herbs and oil in the pan. Taste a small piece of fish and adjust the seasoning with more salt if needed. Serve immediately, garnished with additional fresh herbs if desired, and enjoy this dish family-style.
