Ingredients

  • 800 glamb cubes
  • 2onions
  • 2tomatoes
  • 2 tbspoil
  • 1 tsppaprika

Method

  1. Begin by seasoning the 800 g of lamb cubes with fine sea salt and black pepper to taste, along with 1 tsp of paprika. Ensure each piece is evenly coated by tossing them together in a large bowl. This step infuses the lamb with flavor and prepares it for browning.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the seasoned lamb cubes in a single layer, making sure not to overcrowd the pot. Brown the lamb on all sides until each piece has a deep, rich color. This step is crucial for developing the stew's flavor.
  3. While the lamb is browning, finely chop 2 onions and 2 tomatoes. Once the lamb is browned, remove it from the pot and set aside. Add the chopped onions to the same pot, using the remaining oil and lamb drippings to sauté them until they become translucent and start to caramelize, which will take on a sweet aroma.
  4. Add the chopped tomatoes to the pot with the onions. Stir well, allowing the tomatoes to break down and integrate with the onions, creating a thick, aromatic base. This mixture should become a cohesive sauce, which will serve as the foundation of the stew.
  5. Return the browned lamb cubes to the pot, stirring them into the onion and tomato mixture. Ensure the lamb is well-coated with the sauce. Cover the pot with a lid and reduce the heat to low, allowing the stew to braise gently. Cook until the lamb is tender, which means it should easily yield to a fork and the sauce should be rich and flavorful.
