Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil

Method

  1. Begin by cleaning the shrimp: remove the shells and devein them. Rinse the shrimp under cold water and pat them dry with a paper towel. This ensures that the shrimp will sear properly and not steam in the pan.
  2. Peel and finely mince the 4 cloves of garlic. In a large skillet, pour in 80 ml of olive oil and heat it over medium heat. Add the minced garlic to the oil, stirring gently. Cook until the garlic becomes fragrant and just begins to turn golden, which will infuse the oil with its flavor.
  3. Add the cleaned shrimp to the skillet in a single layer. Increase the heat to medium-high. Cook the shrimp, stirring occasionally, until they turn pink and opaque, which should take about 2 to 3 minutes. Be careful not to overcook them, as they can become rubbery.
  4. Once the shrimp are cooked, remove the skillet from the heat. Squeeze the juice of one lemon over the shrimp, ensuring even distribution. Add chili to taste, adjusting the amount based on your preference for heat.
  5. Taste a shrimp and sprinkle with fine sea salt to taste, mixing well to ensure all shrimp are evenly seasoned. Serve immediately, as the dish is best enjoyed fresh and hot, allowing the flavors to shine.
