Ingredients

  • 600 gshrimp
  • 4 clovesgarlic

Method

  1. Begin by cleaning 600 g of shrimp. Remove the shells and devein them by making a shallow cut along the back and pulling out the dark vein. Rinse the shrimp under cold water and pat them dry with a clean kitchen towel to ensure they cook evenly and absorb the flavors well.
  2. Peel and finely chop 4 cloves of garlic. In a large skillet, heat 80 ml of olive oil over medium heat. Add the chopped garlic to the oil, stirring occasionally, until it becomes fragrant and just begins to turn golden. This will infuse the oil with a rich garlic flavor, forming the aromatic base of the dish.
  3. Add the cleaned shrimp to the skillet in a single layer. Cook them over medium heat, stirring occasionally, until they turn pink and opaque. This should take just a few minutes; the shrimp should be firm to the touch but not rubbery, indicating they are perfectly cooked.
  4. Remove the skillet from the heat and squeeze the juice of one lemon over the shrimp, stirring to coat them evenly. Add chili to taste, depending on your preference for heat, and a pinch of fine sea salt. Taste a shrimp to ensure the seasoning is to your liking, adjusting the salt if necessary.
