Ingredients

  • 600 gsquid rings

Method

  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned. Rinse them under cold water to remove any sand or debris, then pat them dry with a clean kitchen towel. Drying the squid is crucial to prevent excess moisture from steaming the squid instead of stir-frying.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the minced garlic and sauté until it becomes fragrant and lightly golden, which should take about 1-2 minutes. This will infuse the oil with a rich garlic flavor.
  3. Add the squid rings to the skillet, spreading them out in a single layer for even cooking. Stir-fry the squid for about 2-3 minutes, or until they turn just opaque and firm to the touch. Be careful not to overcook, as squid can become rubbery if cooked for too long.
  4. Once the squid is cooked, add chili to taste, adjusting the amount based on your preference for heat. Squeeze the juice of one lemon over the squid, stirring to combine and coat the rings with the citrusy flavor.
  5. Taste the dish and add fine sea salt to your liking, ensuring the flavors are balanced. Serve the Peruvian Squid Stir-Fry immediately, while the squid is tender and the flavors are vibrant, perfect for sharing around the table.
