Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil

Method

  1. Start by ensuring the 600 g squid rings are thoroughly cleaned. Rinse them under cold water to remove any residual sand or grit. Pat them dry with a clean kitchen towel to remove excess moisture, which will help them sear better in the pan.
  2. Peel and finely mince the 4 cloves of garlic. Set a large skillet or wok over medium-high heat and add 2 tablespoons of oil. Once the oil shimmers, add the minced garlic and a pinch of chili to taste, stirring constantly. Cook until the garlic is golden and aromatic, being careful not to let it burn.
  3. Add the squid rings to the skillet in a single layer. Stir them gently to coat with the oil and aromatics. Cook the squid over medium-high heat, stirring occasionally, until they turn opaque and firm to the touch. This should happen quickly, as overcooking can make the squid rubbery.
  4. Once the squid is cooked, remove the skillet from the heat. Squeeze the juice of one lemon over the squid, tossing to combine. Taste a piece and add fine sea salt to taste, ensuring the flavors are balanced and vibrant.
  5. Transfer the squid stir-fry to a serving platter. Serve immediately while the dish is warm, allowing everyone at the table to enjoy the fresh, zesty flavors typical of Peruvian home cooking.
