Poulet rôti aux Herbes is a cherished centerpiece of Sunday lunches throughout France, embodying the essence of family gatherings around the table. Ingredients

  • 1whole chicken — about 1.6 kg
  • 4 tbspsoftened butter
  • 4 clovesgarlic
  • 1 bunchfresh thyme and rosemary
  • 1lemon — halved

Method

  1. Preheat your oven to 200°C (390°F). Begin by patting the 1 whole chicken dry with paper towels to ensure the skin will crisp nicely. Rub the entire chicken with 4 tbsp of softened butter, making sure to get under the skin where possible. Season generously with fine salt and black pepper, ensuring every part of the chicken is covered.
  2. Heat a large oven-safe skillet or roasting pan over medium-high heat. Place the chicken breast-side down in the pan and brown it for about 5 minutes until the skin is golden and crisp. Carefully turn the chicken using tongs or a spatula, and brown the other side for another 5 minutes.
  3. Peel and smash 4 cloves of garlic with the flat side of a knife. Add them to the pan along with a bunch of fresh thyme and rosemary. Cut 1 lemon in half and squeeze the juice over the chicken, then place the lemon halves inside the cavity of the chicken. Allow the aromatics to soften and release their fragrance for about 2 minutes.
  4. Transfer the pan to the preheated oven, ensuring the chicken is breast-side up. Roast the chicken uncovered, basting it with the pan juices every 20 minutes. This helps keep the meat moist and infuses it with flavor.
  5. Check for doneness after about 1 hour by inserting a meat thermometer into the thickest part of the thigh; it should read 75°C (165°F). Alternatively, pierce the thigh and check that the juices run clear, not pink.
  6. Once cooked, remove the chicken from the oven and let it rest in the pan for about 10 minutes. This allows the juices to redistribute throughout the meat, making it tender and juicy.
  7. Finish by removing the lemon halves from the cavity and discarding them. Carve the chicken and serve hot, garnished with the roasted garlic and herbs from the pan. The aroma and flavors should be rich and inviting, perfect for a family meal.
