Vegetable Pulao

Vegetable Pulao is a staple in Pakistani home kitchens, prepared with the ease and intuition that comes from years of family tradition. This dish finds its place on the table during everyday meals, a comforting presence that speaks of familiarity and warmth. Passed down through generations, its simplicity is its strength, capturing the essence of home cooking where salt is measured by the hand and ghee flows generously.

The aroma of cumin and bay leaf mingles with the nutty fragrance of basmati rice, creating a symphony of flavors that is both subtle and satisfying. Each grain is perfectly separate, with vegetables adding bursts of color and texture. This pulao invites you to scoop it up, savoring each mouthful as it melds into a unified whole, celebrating the everyday joy of a shared meal.

Ingredients

  • 400 gbasmati rice
  • 200 gmixed vegetables
  • 1 tspcumin
  • 2 tbspghee
  • 1bay leaf
  • to tastefine sea salt

Method

  1. Rinse 400 g of basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice and set it aside. Meanwhile, chop 200 g of mixed vegetables into small, uniform pieces to ensure even cooking. Season the vegetables lightly with fine sea salt to enhance their natural flavors.
  2. In a large, heavy-bottomed pot, heat 2 tbsp of ghee over medium heat. Add 1 tsp of cumin seeds and 1 bay leaf, allowing them to sizzle and release their aroma for about 30 seconds. This step infuses the ghee with the spices, creating a fragrant base for the pulao.
  3. Add a finely chopped onion to the pot and cook slowly, stirring occasionally, until the onion turns translucent and soft. This should take about 5 to 7 minutes. The onion should not brown; it should become soft and sweet, forming the flavor foundation for the dish.
  4. Once the onion is ready, add the seasoned mixed vegetables to the pot. Stir them gently to coat with the ghee and spices, cooking for about 3 to 4 minutes until the vegetables start to soften slightly. This brief cooking helps the vegetables begin to absorb the flavors without losing their texture.
  5. Add the rinsed and drained rice to the pot, stirring carefully to mix it with the vegetables and spices. Pour in enough water to cover the rice by about 1 inch, and add salt to taste. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer.
  6. Cook the pulao until the rice is tender and has absorbed all the water, which you can judge by tilting the pot slightly to see if any liquid remains. The rice grains should be separate and fluffy, and the vegetables should be tender but not mushy. If necessary, adjust the salt to taste at this stage.
  7. Once the rice is cooked, turn off the heat and let the pulao sit, covered, for about 5 minutes. This resting period allows the flavors to meld and the steam to finish cooking the rice. Fluff the pulao gently with a fork before serving to separate the grains.
