Whole Chicken Doro is a cherished centerpiece in the vibrant culinary landscape of Ethiopian wedding feasts. The chicken becomes tender, absorbing the aromatic notes of garlic and ginger, while the eggs, simmered in the sauce, add a delightful contrast. Serve this with injera, allowing its tangy, spongy texture to complement the robust stew, creating a harmonious balance of flavors and textures.

Ingredients

  • 1.4 kg (3 lb)chicken — cut into 8 to 12 serving pieces
  • 2 tbsplemon juice — for rinsing the chicken
  • 4 tbspberbere
  • 3red onions — very finely chopped
  • 4 clovesgarlic — minced
  • 1 tbspfresh ginger — minced
  • 4 tbspniter kibbeh
  • 1 cupwater or chicken broth
  • 6eggs — hard-boiled and peeled
  • 1 tspfine salt
  • as neededinjera — for serving

Method

  1. Begin by preparing your ingredients. Finely chop 3 red onions and set them aside. Mince 4 cloves of garlic and 1 tablespoon of fresh ginger. Cut the 1.4 kg (3 lb) chicken into pieces, ensuring to remove excess fat and skin. Squeeze 2 tablespoons of lemon juice over the chicken pieces, coating them evenly to tenderize and infuse flavor.
  2. In a large, heavy-bottomed pot, add the chopped onions. Cook them over medium heat without any oil, stirring frequently. Allow the onions to sweat and release their moisture, continuing until they become soft and translucent, which should take about 10 minutes. Once the onions are ready, add 4 tablespoons of niter kibbeh. Stir until the onions take on a golden hue and the niter kibbeh is fully melted.
  3. Add 4 tablespoons of berbere spice blend to the pot, along with the minced garlic and ginger. Stir the mixture well to coat the onions, allowing the spices to bloom. Cook for about 2-3 minutes until the mixture becomes fragrant, indicating that the spices are well integrated and aromatic.
  4. Increase the heat slightly and add the chicken pieces to the pot. Stir them into the onion and spice mixture, ensuring each piece is well coated. Allow the chicken to brown slightly, which will enhance the flavor of the dish. Once browned, pour in 1 cup of water or chicken broth, ensuring the chicken is mostly submerged. Bring the mixture to a gentle simmer.
  5. Cover the pot and reduce the heat to low. Let the chicken cook slowly, stirring occasionally, until it becomes tender and the sauce has thickened and reduced. This should take about 45 minutes to 1 hour. The chicken is done when it is tender and the sauce clings to the pieces, rich and flavorful.
  6. While the chicken is cooking, hard-boil 6 eggs in a separate pot. Once cooked, peel and set them aside. When the chicken is nearly done, add the peeled eggs to the pot, allowing them to absorb the flavors of the sauce for about 10 minutes.
  7. Taste the sauce and adjust with 1 teaspoon of fine salt or more to your preference. Serve the Whole Chicken Doro hot, accompanied by fresh injera, allowing everyone to enjoy the rich, spiced flavors of this traditional Ethiopian dish.
