Stuffed Msemen

Msemen, a beloved Moroccan staple, takes on a new form when stuffed with spiced onion and kefta. This variation is perfect for lunch and pairs wonderfully with a pot of mint tea. While msemen is often enjoyed plain during breakfast, the addition of a savory filling transforms it into a satisfying midday meal, offering a taste of Morocco's rich culinary landscape.

When cooked, the msemen should be golden and crisp on the outside, while the filling inside remains moist and aromatic. The tender layers of the bread contrast beautifully with the savory, spiced meat or herb-infused onions, creating a flavorful bite that's both hearty and comforting.

Ingredients

  • 1 batchmsemen dough
  • 300 g (10 oz)kefta or cooked onion and herbs
  • 3 tbspoil for cooking

Method

  1. Start by preparing your work surface with a light dusting of flour. Take one piece of the prepared msemen dough and flatten it gently with your fingertips into a thin, round disc, about 20 cm (8 inches) in diameter. Ensure the dough is even in thickness to prevent uneven cooking.
  2. Place about 2 tablespoons of the kefta or cooked onion and herbs filling in the center of the dough circle. Spread it slightly, leaving a border of about 5 cm (2 inches) around the edges. This will help in sealing the msemen properly when folded.
  3. Begin folding by bringing one edge of the dough over the filling towards the center, then fold the opposite edge to overlap slightly. Repeat with the remaining two sides, forming a square package. Press gently to seal the edges, ensuring no filling escapes.
  4. Heat a griddle or a large non-stick skillet over medium-high heat and add 1 tablespoon of oil. Swirl the oil to coat the surface evenly. Once the oil is shimmering, carefully place the folded msemen onto the griddle.
  5. Cook the msemen for about 2-3 minutes on the first side. You will know it's time to flip when the bottom is golden brown and the dough feels firm to the touch. Add another tablespoon of oil if necessary, then flip the msemen.
  6. Continue cooking the other side for another 2-3 minutes. The msemen is done when both sides are golden brown and the layers have puffed slightly, indicating the filling is hot and the dough is cooked through.
  7. Remove the msemen from the griddle and let it rest for a minute on a cutting board. Use a sharp knife to cut it into wedges, revealing the layers and filling inside. Serve immediately, ideally with a pot of Moroccan mint tea.
