Cauliflower Salad

In the cool embrace of winter, Moroccan tables welcome a variety of mezze, with this cauliflower salad taking a well-deserved place among them. It shares its space harmoniously with roasted peppers, offering a balance of tender and crisp textures that invite the palate to explore its subtle complexity.

Boiled just enough to retain a slight crunch, the cauliflower is cloaked in a chermoula-inspired dressing. Cumin and paprika provide warmth, while the fresh burst of lemon and parsley lifts each bite. The result is a dish that is both familiar and intriguing, a reminder that simplicity can hold profound flavors.

Ingredients

  • 1cauliflower, cut into florets
  • 2garlic cloves, crushed
  • 1 tspcumin
  • 1 tsppaprika
  • 4 tbspolive oil
  • 1lemon, juiced
  • 1 handfulparsley, chopped
  • 3/4 tspsalt

Method

  1. Fill a large pot with water and add 3/4 tsp of salt. Bring it to a boil over high heat. Once boiling, add the cauliflower florets. Cook them until they are just tender but still have a slight bite, which should be when they are easily pierced with a fork but not falling apart. Drain the cauliflower well in a colander to remove excess water.
  2. While the cauliflower is still hot, transfer it to a large mixing bowl. Immediately drizzle with 4 tbsp of olive oil and the juice of 1 lemon. Add the crushed 2 garlic cloves, 1 tsp of cumin, 1 tsp of paprika, and a handful of chopped parsley. Sprinkle with the remaining salt.
  3. Gently toss the cauliflower with the dressing ingredients, ensuring each floret is well coated. Use a large spoon or your hands to mix, being careful not to break the florets. The heat from the cauliflower will help the flavors meld together.
  4. Allow the salad to sit for 15 minutes at room temperature. This resting time lets the cauliflower absorb the dressing, enhancing the flavors. Serve the salad slightly warm or at room temperature as part of a mezze spread.
