Ingredients

  • 400 gcooked chickpeas
  • 80 mllemon juice
  • 60 mlextra virgin olive oil
  • 1red onion
  • handfulparsley and mint
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by peeling and finely dicing 1 red onion. Place the diced onion in a small bowl and cover it with cold water. Let it soak for about 5 minutes to mellow its sharpness, then drain and set aside.
  2. Rinse a handful of fresh parsley and a handful of fresh mint under cold running water. Pat them dry with a clean kitchen towel. Remove the leaves from the stems and chop them finely. Set the herbs aside to keep them fresh and aromatic.
  3. In a large mixing bowl, combine 400 g of cooked chickpeas. If using canned chickpeas, rinse them under cold water and drain well to remove any excess liquid and sodium.
  4. Add the drained red onion to the chickpeas, followed by the chopped parsley and mint. Sprinkle 1 teaspoon of cumin over the mixture. The cumin will add a warm, earthy flavor that complements the freshness of the herbs.
  5. In a separate small bowl, whisk together 80 ml of lemon juice and 60 ml of extra virgin olive oil. Season the dressing with fine sea salt to taste. The dressing should be tangy and well-balanced, enhancing the natural flavors of the salad.
  6. Pour the dressing over the chickpea mixture in the large bowl. Using a large spoon or salad tongs, gently toss the salad to ensure all ingredients are evenly coated. Be careful not to mash the chickpeas; they should remain whole and intact.
