Serves 4 to 6 Salad vegetarian, Salads, Christmas

Ensalada Navideña de Manzana

Ensalada Navideña de Manzana graces the tables of Mexican families during the Christmas season, a festive dish that signals the warmth of the holidays. This salad is a staple of the celebratory spread, inviting everyone to gather around with its sweet and creamy allure. It’s a reflection of home-cooked comfort, where tradition meets the simplicity of cherished ingredients.

The flavors are a delightful blend of crisp red apples and the luscious richness of sweetened condensed milk and table cream. Pineapple adds a tangy twist, while walnuts and raisins provide a satisfying texture, balanced by the playful softness of mini marshmallows. Each spoonful is a harmonious taste of Christmas joy.

Ingredients

  • 5red apples — cored and diced
  • 1 can (397 g)sweetened condensed milk
  • 1 cupmedia crema or table cream
  • 1 cupcanned pineapple — drained and chopped
  • 150 g (1 1/4 cups)shelled walnuts or pecans — chopped
  • 100 g (2/3 cup)raisins
  • 1 cupmini marshmallows — optional, the way the family likes it
  • 1 pinchfine salt

Method

  1. Start by preparing the fruits. Core and dice the 5 red apples into small, bite-sized pieces, about 1/2 inch each. Open the can of pineapple and drain the juice, then dice the pineapple into similar-sized pieces. Toss the diced apples and pineapple with a little lime juice in a large mixing bowl. This will prevent the apples from browning and keep them fresh while you continue with the recipe.
  2. In a separate medium-sized bowl, combine the 1 can (397 g) of sweetened condensed milk and 1 cup of media crema or table cream. Use a whisk to mix them together until the mixture is smooth and pourable, ensuring there are no lumps. This creamy mixture will serve as the dressing for your salad, bringing all the flavors together.
  3. Add the diced apples and pineapple to the bowl with the cream mixture. Next, add 150 g (1 1/4 cups) of shelled walnuts or pecans, 100 g (2/3 cup) of raisins, and a pinch of fine salt. Gently fold the ingredients together using a spatula, ensuring each piece of fruit and nut is evenly coated with the creamy dressing. Be careful not to crush the fruit as you mix.
  4. Transfer the salad to a serving dish, cover it with plastic wrap, and place it in the refrigerator. Allow it to chill for at least two hours. This chilling time is crucial as it allows the dressing to thicken and the flavors to meld together, enhancing the overall taste of the salad.
  5. Before serving, give the salad a gentle stir to redistribute the dressing and ingredients. If your family enjoys them, fold in 1 cup of mini marshmallows at this point. Serve the Ensalada Navideña de Manzana cold, letting its sweet and creamy aroma invite everyone to the table.
