Lentil Salad

In the bustling markets of Morocco, lentil salad is a beloved staple, often enjoyed as part of a mezze spread or as a refreshing light lunch. This dish captures the essence of simple, wholesome ingredients—lentils, the humble legume, stand at the forefront, bringing earthy tones to the mix. Combined with fresh tomato and onion, it's a dish that balances both tradition and the vibrant flavors of everyday Moroccan life.

The salad delights with its contrasting textures and harmonious flavors. The lentils, cooked just enough to hold their shape, provide a hearty base, while the juicy tomato and sharp onion add a crisp bite. Cumin lends its warm, smoky notes, perfectly complemented by the brightness of fresh parsley and a squeeze of lemon. A drizzle of olive oil ties it all together, making each forkful a celebration of simplicity and taste.

Ingredients

  • 250 g (9 oz)green or brown lentils
  • 1tomato, diced
  • 1small onion, minced
  • 1 tspcumin
  • 3 tbspolive oil
  • 1lemon
  • 1 handfulparsley, chopped
  • pinchsalt

Method

  1. Rinse 250 g (9 oz) of green or brown lentils under cold water to remove any dust or debris. In a medium-sized pot, add the lentils and cover them with water, ensuring the water level is about 2 inches above the lentils. Add a pinch of salt to the water to season the lentils as they cook. Bring the pot to a boil over high heat, then reduce the heat to a gentle simmer. Cook the lentils until they are tender but still hold their shape, which will be evident when they are soft to the bite but not mushy.
  2. Once the lentils are cooked, drain them in a colander and allow them to cool slightly. This cooling step is important as it prevents the lentils from cooking further and becoming too soft. While the lentils are cooling, you can prepare the other ingredients.
  3. Dice 1 tomato into small, even pieces and set aside. Mince 1 small onion finely to ensure it blends well with the other salad ingredients. Chop a handful of parsley, which will add freshness and color to the salad.
  4. In a large mixing bowl, combine the cooled lentils, diced tomato, minced onion, and chopped parsley. Add 1 teaspoon of cumin to the mixture, which will impart a warm, earthy flavor characteristic of Moroccan cuisine.
  5. Drizzle 3 tablespoons of olive oil over the lentil mixture. Juice 1 lemon and pour the juice into the bowl, which will add a bright, tangy flavor to the salad. Gently toss all the ingredients together until they are well combined and the lentils are evenly coated with the dressing.
  6. Taste the salad and adjust the seasoning if necessary, adding a pinch more salt if desired. The salad should have a balanced flavor with the earthiness of the cumin, the freshness of the tomato and parsley, and the tanginess of the lemon.
  7. Transfer the salad to a serving dish and let it rest at room temperature for a few minutes before serving. This allows the flavors to meld together. Enjoy the salad as part of a mezze spread or as a light lunch.
