  1. Start by washing and drying 150 g of mixed greens thoroughly to remove any dirt or grit. Use a salad spinner or pat them dry with a clean kitchen towel. This ensures the dressing adheres well to the leaves.
  2. Select a variety of fresh herbs such as cilantro, mint, and Thai basil. Roughly chop them to release their aromas and flavors, aiming for about a handful in total. This will add a fragrant and authentic Thai touch to your salad.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until they form a cohesive dressing. Taste and adjust with fine sea salt to your preference, ensuring the dressing is well-balanced and enhances the greens.
  4. Place the mixed greens and chopped herbs in a large salad bowl. Drizzle the prepared dressing over the top, ensuring even coverage. Use your hands or salad tongs to toss the salad gently, making sure the greens and herbs are coated without bruising them.
