Aloo Jeera

Serves 4 to 6 vegetarian

Aloo Jeera

Aloo Jeera is a quintessential North Indian comfort dish, often prepared in home kitchens with an intuitive touch rather than strict measurements. The harmony of cumin seeds and turmeric mingling with potatoes is a staple at family meals, where the skill of seasoning is passed down through generations. This dish is emblematic of everyday Indian cooking, where the ability to judge salt by hand and use oil liberally is a mark of culinary wisdom.

Expect a medley of flavors and textures, where the earthy warmth of cumin and the golden hue of turmeric envelop tender potatoes. The gentle heat from green chilies and the fresh burst of cilantro complete this aromatic experience. Honoring its home-cooked roots, Aloo Jeera is best enjoyed as a part of a shared meal, embodying the simplicity and richness of Indian family dining.

Ingredients

  • 5potatoes
  • 2 tspcumin seeds
  • 1 tspturmeric
  • 2green chilies
  • 2 tbspoil
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Peel and dice the 5 potatoes into evenly sized cubes, about 1/2 inch each. This ensures they cook uniformly and absorb the flavors well.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pan over medium heat. Once the oil is hot, add 2 teaspoons of cumin seeds. Allow them to sizzle and release their aroma, which should take about 30 seconds.
  3. Add the diced potatoes to the pan, stirring to coat them evenly with the oil and cumin seeds. This initial coating helps the potatoes absorb the flavors as they cook.
  4. Slice 2 green chilies lengthwise and add them to the pan, along with 1 teaspoon of turmeric. Stir well to ensure the potatoes are evenly coated with the turmeric, which will give them a vibrant yellow color.
  5. Cover the pan with a lid and let the potatoes cook on medium heat. Stir occasionally to prevent sticking. Cook until the potatoes are tender and can be easily pierced with a fork, but still hold their shape.
  6. Once the potatoes are cooked, season them with fine sea salt to taste. Stir in a handful of chopped cilantro, mixing well to distribute the fresh herb throughout the dish.
  7. Serve the Aloo Jeera warm, allowing the flavors to meld together. This dish is perfect for sharing at the table, embodying the spirit of Indian home cooking.
