Method

  1. Begin by preparing the cauliflower. Remove the outer leaves and cut the cauliflower into evenly sized florets, about 1 to 2 inches each. This ensures they cook uniformly and absorb the flavors evenly.
  2. In a large skillet, heat 60 ml of extra virgin olive oil over medium heat. Add 2 cloves of garlic, finely minced, and cook until the garlic becomes fragrant and just begins to turn golden, which will infuse the oil with its aroma.
  3. Add the cauliflower florets to the skillet, stirring to coat them thoroughly in the garlic-infused oil. Cook, stirring occasionally, until the cauliflower is tender and lightly browned on the edges. The florets should be soft enough to pierce easily with a fork but still hold their shape.
  4. In a small bowl, whisk together 4 tbsp of tahini with 60 ml of lemon juice until smooth. The mixture should be creamy and slightly thickened, with a pale, creamy color.
  5. Pour the tahini and lemon mixture over the cooked cauliflower in the skillet. Stir well to ensure each floret is coated in the sauce, and continue to cook for another 2 minutes to allow the flavors to meld. The sauce should cling to the cauliflower and have a glossy appearance.
  6. Season the dish with fine sea salt to taste, adjusting as needed to balance the flavors. The salt will enhance the natural sweetness of the cauliflower and the tanginess of the lemon.
