Green Beans with Tomato & Olive Oil embodies the everyday elegance of Greek home cooking, where fasolakia-style dishes grace the table with simplicity and warmth. This Mediterranean staple is crafted with ingredients that speak of the sea and the garden, welcoming the olive oil and lemon that are always within reach. It's a dish that fits seamlessly into the rhythm of life, offering nourishment without fuss.

The flavors are bright and pure, with tender green beans absorbing the rich, fruity olive oil and the sweet acidity of ripe tomatoes. The aroma of garlic and dill weaves through each bite, creating a satisfying balance that is both refreshing and comforting. This dish is a celebration of freshness, best enjoyed warm or at room temperature, where its simplicity shines.

Ingredients

  • 700 ggreen beans
  • 400 gtomatoes
  • 1onion
  • 80 mlextra virgin olive oil
  • 2 clovesgarlic
  • dill — optional
  • to tastefine sea salt

Method

  1. Begin by preparing the vegetables. Trim the ends of 700 g green beans and cut them into 5 cm pieces for even cooking. Dice 400 g tomatoes into small cubes, ensuring they are roughly the same size for uniform texture. Finely chop 1 onion and mince 2 cloves of garlic, which will infuse the dish with aromatic flavors.
  2. In a large, heavy-bottomed skillet or saucepan, heat 80 ml of extra virgin olive oil over medium heat. Add the minced garlic and chopped onion to the pan. Stir occasionally, allowing them to cook until the onion becomes translucent and the garlic releases its aroma, which should take about 2-3 minutes.
  3. Add the prepared green beans to the pan, stirring them to coat evenly with the fragrant oil. Cook for about 5 minutes, stirring occasionally, until the beans start to turn a vibrant green and slightly tender but still crisp.
  4. Introduce the diced tomatoes to the skillet, stirring to combine them with the green beans. Cover the pan with a lid and let the mixture simmer gently. The tomatoes should break down, releasing their juices and creating a light sauce. Stir occasionally until the beans are tender and the tomatoes have softened, which should be evident when the beans are easily pierced with a fork and the tomatoes have melded into a chunky sauce.
  5. Season the dish with fine sea salt to taste, adjusting as needed to enhance the natural flavors of the vegetables. If desired, sprinkle freshly chopped dill over the top for a burst of freshness. Serve the Green Beans with Tomato & Olive Oil warm, allowing the flavors to evoke the simplicity and warmth of a Mediterranean meal.
