  1. Preheat your oven to 200°C (392°F). Peel 900 g of sweet potatoes and cut them into even-sized cubes, about 2 cm each. This ensures they cook evenly and become tender at the same rate. Place the sweet potato cubes in a large mixing bowl.
  2. In a small saucepan over low heat, warm 80 ml of extra virgin olive oil. Add 1 teaspoon of smoked paprika and stir gently for about a minute until the mixture becomes aromatic, but be careful not to burn the paprika. This step infuses the oil with flavor, which will coat the sweet potatoes.
