Method

  1. Begin by rinsing 250 g of brown rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky. Drain the rice thoroughly using a fine-mesh sieve.
  2. Finely chop a handful of fresh parsley and dill, setting them aside for later use. Mince 2 cloves of garlic, ensuring the pieces are small and even to release their full flavor during cooking.
  3. In a medium-sized saucepan, heat 60 ml of extra virgin olive oil over medium heat. Add the minced garlic and stir gently. Cook until the garlic becomes fragrant and just begins to turn golden, being careful not to let it burn, as this will impart a bitter taste.
  4. Add the rinsed and drained brown rice to the saucepan with the garlic-infused oil. Stir the rice to coat each grain in the oil, allowing it to absorb the garlic flavor. Continue stirring for about 2 minutes until the rice becomes slightly translucent at the edges.
  5. Pour in 500 ml of water and add a pinch of fine sea salt to taste. Increase the heat to high and bring the water to a boil. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer gently.
  6. Cook the rice until it is tender and all the water has been absorbed. You can tell the rice is done when it is soft but still has a slight chew, and the grains have expanded and separated. If needed, add a little more water and continue cooking until the desired texture is reached.
  7. Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for about 5 minutes. This resting period allows the rice to finish cooking in its own steam and enhances its texture.
