Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tablespoon of olive oil in a large pot over medium heat. Once the oil is shimmering, add the chopped onion and garlic. Stir frequently, allowing them to soften and release their aroma without browning, which should take about 3-5 minutes.
  2. Rinse 300 g of red lentils under cold water until the water runs clear. This helps remove excess starch and any debris. Add the rinsed lentils to the pot with the softened onions and garlic. Stir in 1 teaspoon of cumin, ensuring the lentils are well-coated with the aromatic base.
  3. Pour in 1.5 liters of water, stirring to combine all the ingredients. Increase the heat to high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer. Stir occasionally, and watch for the lentils to become tender and slightly creamy, which indicates they are cooked through.
  4. As the lentils cook, roll a lemon on the countertop to release its juices, then cut it in half. Once the lentils are tender, squeeze the juice of half a lemon into the pot, stirring well to incorporate the citrus flavor. Taste the lentil pot and season with fine sea salt and black pepper to your liking, adjusting as necessary.
  5. Finish by giving the lentil pot a final stir, ensuring all flavors are well-blended. Serve the Korean Lentil Pot 3 immediately, allowing the warmth and aroma to invite everyone to the table for a shared meal.
