Ingredients

  • 2potatoes — peeled and diced
  • 3carrots — sliced
  • 1/2 headgreen cabbage — shredded
  • 1yellow onion — finely chopped
  • 3 clovesgarlic — minced
  • 1 tbspfresh ginger — minced
  • 1 tspground turmeric
  • 3 tbspoil
  • 6 cupswater or vegetable broth
  • 1 tspfine salt

Method

  1. Begin by preparing the vegetables and aromatics. Peel and dice 2 potatoes into 1/2-inch cubes. Slice 3 carrots into thin rounds. Chop 1/2 head of green cabbage into bite-sized pieces. Finely chop 1 yellow onion, mince 3 cloves of garlic, and grate 1 tablespoon of fresh ginger. Set these aside separately as they will be added at different stages.
  2. In a large pot, heat 3 tablespoons of oil over medium heat. Add the chopped onion and cook, stirring occasionally, until it becomes soft and takes on a pale golden color. This should take about 5 to 7 minutes. Once the onion is ready, add the minced garlic and grated ginger, stirring for another 1 to 2 minutes until they release their fragrant aroma.
  3. Sprinkle 1 teaspoon of ground turmeric into the pot. Stir it into the onion, garlic, and ginger mixture, allowing it to bloom in the oil. This step helps the turmeric lose its raw edge and infuses the oil with its vibrant color and earthy aroma.
  4. Add the diced potatoes, sliced carrots, and chopped cabbage to the pot. Pour in 6 cups of water or vegetable broth, ensuring that the vegetables are submerged. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to maintain a gentle bubble and cook until the vegetables are tender and the broth has developed a rich, unified flavor, about 20 to 25 minutes. The potatoes should be easily pierced with a fork, and the carrots should be tender but not mushy.
  5. Taste the soup and add 1 teaspoon of fine salt, adjusting to your preference. Stir well to ensure the salt is evenly distributed. Ladle the hot soup into warm bowls, making sure each serving has a generous portion of vegetables and broth. Serve immediately, enjoying the comforting and aromatic flavors of this Ethiopian classic.
