Adobo Spice Mix

Adobo Spice Mix, a staple from the kitchens of Arequipa, captures the essence of Peruvian home cooking. This blend is traditionally crafted by hand, with salt measured by touch and instinct, reflecting the unspoken artistry of generations. In Arequipa, this mix is a cornerstone of hearty meals, shared among family and friends, where each cook adds their unique touch, yet remains faithful to its robust character.

Rich with the deep, smoky notes of aji panca, this spice mix is a vibrant dance of earthy cumin and fragrant oregano, rounded out by a subtle kick of black pepper and the steadying presence of fine sea salt. It brings a flavorful warmth, embracing dishes with a comforting depth that is unmistakably Peruvian.

Ingredients

  • 2 tbspaji panca powder
  • 1 tbspcumin
  • 1 tbsporegano
  • 1 tspfine sea salt
  • 1 tspblack pepper

Method

  1. Place a dry skillet over medium heat. Add 1 tbsp cumin and 1 tsp black pepper to the skillet. Toast the spices, stirring frequently, until they release a fragrant aroma and the cumin seeds deepen in color, about 2 to 3 minutes. This step enhances the flavor of the spices by releasing their essential oils.
  2. Remove the skillet from the heat and allow the toasted spices to cool completely. This cooling step prevents the spices from clumping together when mixed with other ingredients.
  3. Once cooled, grind the toasted spices using a spice grinder or mortar and pestle until they reach a fine consistency. If you don't have a grinder, you can also crush them with the back of a spoon.
  4. In a mixing bowl, combine the ground spices with 2 tbsp aji panca powder, 1 tbsp oregano, and 1 tsp fine sea salt. Stir the mixture thoroughly to ensure even distribution of all ingredients. The aji panca adds a mild heat and a fruity depth, while oregano contributes an earthy aroma.
  5. Transfer the Adobo Spice Mix to an airtight container. Store it in a cool, dark place to preserve its potency and flavor. This mix is now ready to use in various Peruvian dishes, adding a rich and authentic taste.
