Brasileiro House Rub

Brasileiro House Rub is a staple pantry blend that brings the essence of Brazilian flavors to your table. This mix of ground cumin, paprika, coriander, black pepper, and fine sea salt is a versatile seasoning that enhances meats, vegetables, and more with its earthy and slightly smoky profile.

Commonly used across Brazil, this rub adds a robust depth to dishes, making it a favorite in both home kitchens and churrascarias. The combination of spices creates a balanced and aromatic taste that complements the diverse culinary landscape of Brazil.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by selecting a small, dry skillet. Place it over medium heat and add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they are ready when the aroma becomes rich and the spices take on a slightly darker hue, which should take about 2 to 3 minutes.
  2. Once the spices are toasted, remove the skillet from the heat and immediately transfer the spices to a cool, dry plate to stop the cooking process. Allow them to cool completely to room temperature. This step is crucial to prevent any moisture from getting into the mix, which could affect the texture and longevity of the rub.
  3. After the spices have cooled, combine them with 1 tablespoon of fine sea salt in a spice grinder or a mortar and pestle. If using a grinder, pulse until the mixture is evenly combined and has a uniform texture. If using a mortar and pestle, grind until the mixture is smooth and well-blended.
  4. Transfer your Brasileiro House Rub to an airtight container, such as a glass jar with a tight-fitting lid. Store it in a cool, dark place, like a pantry or cupboard, to protect it from light and moisture, which can degrade the spices over time.
  5. For the best aroma and flavor, aim to use your Brasileiro House Rub within a few months. This will ensure that the spices retain their potency and contribute the most vibrant flavors to your dishes.
