Garam Masala

Garam Masala

Garam Masala is a staple in the Pakistani kitchen, a blend that finds its way into a vast array of dishes, lending them warmth and depth. Traditionally mixed by hand, this spice blend is a hallmark of home cooking, where salt is pinched with care and fat is added with a generous hand, reflecting a culture that values rich, flavorful meals shared at the table.

This version of Garam Masala is both aromatic and robust, capturing the essence of coriander, cumin, and black pepper, with a hint of cinnamon and cloves. It should feel bold yet balanced, a symphony of spices that transforms the simplest ingredients into something extraordinary. Set the table for sharing, as this spice mix is meant to enhance communal meals, inviting everyone to savor each bite.

Ingredients

  • 2 tbspcoriander seeds
  • 1 tbspcumin
  • 1 tbspblack pepper
  • 1cinnamon stick
  • 1 tspcloves
  • 1 tspfine sea salt

Method

  1. Place a dry skillet over medium heat and add 2 tablespoons of coriander seeds, 1 tablespoon of cumin seeds, 1 tablespoon of black peppercorns, 1 cinnamon stick, and 1 teaspoon of cloves. Stir the spices gently with a wooden spoon to ensure even toasting. You'll know they are ready when the spices release a warm, aromatic scent and the coriander seeds take on a slightly darker hue.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate. Allow them to cool completely, which is crucial to prevent moisture from affecting the grinding process. This cooling step ensures that the spices retain their full flavor when ground.
  3. Once the spices are completely cool, transfer them to a spice grinder or a mortar and pestle. Grind the spices until you achieve a fine, even powder. If using a mortar and pestle, take your time to ensure all pieces are ground thoroughly.
  4. Transfer the ground spices to a mixing bowl. Add 1 teaspoon of fine sea salt and stir well to combine. The salt not only enhances the flavor but also helps to preserve the freshness of your Garam Masala.
  5. To store, transfer the Garam Masala to an airtight container. Keep it away from direct sunlight to maintain its potency. This blend will be ready to add warmth and depth to your Pakistani dishes.
