Ingredients

  • 3 tbspdried huacatay
  • 1 tbspcumin
  • 1 tbsporegano
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 3 tablespoons of dried huacatay, 1 tablespoon of cumin, 1 tablespoon of oregano, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and earthy, and the huacatay leaves have slightly darkened in color.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate to cool completely. This step is crucial as grinding hot spices can lead to clumping and uneven texture.
  3. Once the spices have cooled, place them in a spice grinder or mortar and pestle. Add 1 tablespoon of fine sea salt to the mix. Grind the spices until they form a uniform, fine powder, ensuring that all the ingredients are evenly combined.
  4. Transfer the ground spice blend into an airtight container. Make sure the container is clean and dry to prevent any moisture from affecting the blend.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, to maintain the blend's aromatic qualities. For the best aroma and flavor, aim to use the Huacatay Herb Blend within a few months.
